There’s lots of stuff from Muslim sources describing the protection and support that is required of Muslims toward “people of the Book,” But when you are talking to Islamophobes, you are usually dealing with people who believe that Islam was spread by the sword, and that people were ordered to “convert or die.” Finally there is a book by Michael Philip Penn, “When Christians First Met Muslims,” which has translations of 7th Century Christian clergy describing their first encounters with Muslims from their point of view.
This is an academic book, and useful passages are sparse, but it is from primary sources, and there are some gems. For example:
